Today I wanna share with you how I make my protein waffles. I get many direct messages on Instagram inquiring about my exact diet. Since we are all different, you have to get to know your body and learn what works for you instead of blindly following someone else’s diet. A meat- and dairy-free diet (high protein + fat) is what works for me! This is one of my staple recipes:
Double the ingredients to make 6 waffles.
- 200g vegan curd
- 2 tbsp almond milk
- 1 egg or flax egg
- 70g flour (almond or coconut flour)
- 5g baking powder
- 2 tbsp erythritol (or 2 tbsp agave nectar)
Whisk the wet ingredients. Mix in dry ingredients and combine well. Ladle 3 tbsp of the batter per waffle into a preheated waffle iron. Cook the waffles until golden and crisp.
- 110g soya yogurt, unsweetened
- 60g mixed berries
- 2 tbsp coconut milk
- 1 handful raspberries, fresh
- raw almonds
